How to Make Mochi -Easy Recipe
Mochi is great treat for people can not have gluten. The best mochi should start from the scratch = start from the sweet rice(soak the rice...ground the rice...). I tried once and the mochi was so good. But when I have limited time, I use flour to save my time.Let's start from the ingredients:glutinous rice flour 200g(this is easy to find in most of Asian supermarkets)Corn starch 1 Tsp(Help the dough to remain soft)water 275 gsugar 50 g Instructions1 Mix rice flour, sugar and water in a large bowl. Mix until it takes on the consistency of the mixture(like soup).2 Oil the entire interior surface of a pan. Pour the mixture of Step 1 into the pan.3 Cover the pan with a paper towel, and microwave for 10 to 15 minutes. You can also place the pan on a steamer and steam the dough for 30 to 45 minutes on medium.4 Oil the rolling pin or a rod and use it to knead(hit) the dough until it acquires a smooth texture. This step will give you chewy mochi.5 Cut the dough into bite-sized pieces, coating with peanut powder/sugar mixture. You can fill them with sesame powder, peanut powder,or red beans paste. Btw, I use blender to ground Planter peanuts to get my own peanut powder.
